In a container, add 4 eggs and with the help of a fue or an electric mixer, beat very well.

Then add 2 cups of sugar. I am using crystal sugar, but it can be refined or demerara sugar. Beat again for 1 minute and add ½ cup of oil, it can also be the same amount of butter or margarine. Now just tap for 1 minute.

Now add 200ml coconut milk, ½ cup water, 1 cup tapioca dough, 1 cup all-purpose flour and ½ cup dry grated coconut, it can also be fresh. But it has to be grated coconut, it can't be flaked. Mix everything very well. Then add a shallow tablespoon of baking powder and mix lightly.
Step 4
Grease a pan with butter and all-purpose flour. The shape I'm using is 20cm in diameter by 8cm high.
Step 5
Pour the mixture into the pan and bake in a preheated oven at 180°C for approximately 45 minutes or until you see it is golden brown on top.
